Classic Shrimp Scampi Pasta

1. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook pasta according to package instructions until al dente.
  • Reserve ½ cup of pasta water, then drain.

2. Cook the Shrimp

  • Season shrimp with salt and pepper.
  • Heat olive oil and 1 tablespoon butter in a large skillet over medium heat.
  • Add shrimp and cook for 1–2 minutes per side until pink and opaque.
  • Remove and set aside.

3. Make the Garlic Butter Sauce

  • In the same pan, add remaining butter.
  • Sauté garlic for about 30 seconds until fragrant.
  • Add chili flakes (if using), broth or wine, and lemon juice.
  • Simmer for 2–3 minutes to reduce slightly.

4. Combine

  • Return shrimp to the pan.
  • Add cooked pasta and toss to coat in the sauce.
  • Add a splash of reserved pasta water if needed for a silky texture.

5. Finish & Serve

  • Stir in parsley, lemon zest, and Parmesan cheese.
  • Serve immediately while hot.
