Grandma’s Ciabatta Bread

1. Make the Dough

  • In a large bowl, mix flour, salt, sugar, and yeast.
  • Add warm water and olive oil.
  • Stir until a sticky, wet dough forms (do not overmix).

2. First Rise

  • Cover the bowl with plastic wrap or a towel.
  • Let it rise at room temperature for 1–2 hours, until doubled and bubbly.

3. Shape the Bread

  • Lightly flour a surface and gently turn out the dough.
  • Do not knead — just fold it over itself a few times.
  • Shape into a rough rectangle or divide into two loaves.

4. Second Rise

  • Transfer to a parchment-lined baking tray.
  • Let rest for 30–45 minutes.

5. Bake

  • Preheat oven to 220°C (425°F).
  • Bake for 20–25 minutes until golden brown and crusty.

6. Cool

  • Let cool on a rack before slicing.

  • With olive oil and balsamic vinegar
  • For sandwiches or paninis
  • Alongside soups, stews, or pasta dishes
